From my experience in cases where an SEO service stops for a client, their rankings usually drop off the first page in a month.
The speed of decay really depends on the competition strength - I saw one client go from position #1 for a keyword that was returning 20million results with an adwords CPC of $6.00, to not appearing in the first 100 results in just a few weeks.
I cannot tell you the satisfaction when they got back in touch to ask whether I could do anything to correct it, to which I replied sweetly "absolutely not!".

I'm maintaining my site in a long time and for me about if you stop doing SEO is easy to answer. First is it usually drop your ranking because you have so many competitor so they will pass you in the ranking. Second is your sales will be down because you don't have visitors to orders about your product or services. Last is you will lost your money.

I think that a lot of this depends upon the methods being used. If you have put up excellent, substantive, original new content twice a week for the past to years you traffic will probably climb as the rankings mature. However, if your SEO has consisted of being placed on a link network your rankings are going to fall as soon as those links are yanked.
